Ingredients

20 corn tortillas
8 ounces cream cheese
3/4 cup sweet onion , diced ... see more
1/4 cup scallion , diced
2 1/2 cups grated cheddar cheese
2 jalapenos , skins that are diced and the inner skin cleaned out
1/4 cup chopped cilantro
2 cans tuna in water
28 ounces mild el pato enchilada sauce
7 3/4 ounces el pato tomato sauce
2 tablespoons tapitio hot sauce
Tuna Enchiladas are a fun and flavorful way to spice up your weeknight dinners. With a creamy filling made from cream cheese and jalapeños, wrapped inside soft, corn tortillas and smothered in warm and savory enchilada sauce, these enchiladas will have you coming back for more. Instructions

1.Preheat oven to 375 degrees F.
2.In a large mixing bowl, combine cream cheese, jalapeños, sweet onion, scallions, cilantro and tuna. Mix well.
3.Lay tortillas flat, and spoon mixture onto each tortilla. Roll the tortillas up and place seam side down in a greased 9x13 baking dish.
4.Pour the el pato enchilada sauce over the top of the tortillas and spread evenly. Then pour the el pato tomato sauce over that, being sure to get it into the crevices between the tortillas.
5.Sprinkle the cheddar cheese over the top, and bake for 25-30 minutes or until the cheese is melted and bubbly on top.
