6 large eggs , room temperature , separated
1/4 cup all-purpose flour
1/4 cup yellow cornmeal
4 tablespoons vegetable oil
1 cup frozen corn kernels , thawed and patted dry
1/2 cup canned black beans , rinsed and patted dry

Instructions

1.Roast the bell peppers until the skin is charred and wrinkled.
2.Place the charred peppers in a paper bag and let them sit for 10 minutes.

4.Cut a slit in the top of each poblano chile and remove the seeds and membranes. Stuff each chile with the goat cheese and Monterey Jack cheese, then press the edges together to seal.
5.Beat the egg whites until stiff peaks form. In a separate bowl, beat the egg yolks until thick and lemon-colored. Fold in the egg whites.
6.Mix the flour, cornmeal, and salt together and spread it on a flat plate.
7.Heat the oil in a large skillet until it shimmers. Dredge each pepper in the flour mixture and dip it in the egg mixture.
8.Fry each pepper until golden brown on both sides and transfer to a paper towel-lined platter.
9.To prepare the sauce, blend the roasted bell peppers, orange juice, and salt in a blender until smooth.
10.Serve the peppers with the roasted red pepper sauce, corn kernels, and black beans on top.
