Ingredients

1/2 - 3/4 1/2-3/4 ground turkey or 1/2-3/4 chopped sausage
2 tablespoons pizza seasoning , divided
1 medium onion
2 large ripe tomatoes
1 -2 fresh jalapeno pepper
1 tablespoon olive oil
1 tablespoon white vinegar
1/4 teaspoon granulated garlic
1 teaspoon oregano
8 flour tortillas
4 ounces mozzarella cheese , shredded

Instructions

1.In a large skillet, cook the ground turkey or chopped sausage over medium heat with a tablespoon of pizza seasoning.
2.Remove from heat and set aside.

4.In the same skillet, heat olive oil and white vinegar.
5.Add the onion, tomatoes, jalapeno pepper, garlic, oregano, and the remaining tablespoon of pizza seasoning.

7.Place a tortilla in a separate skillet over medium heat, sprinkle with a quarter cup of shredded mozzarella cheese and spoon some of the meat and vegetable mixture onto half of the tortilla.
8.Fold the tortilla in half and cook on both sides until the cheese has melted.
9.Repeat with remaining tortillas and filling.
