Ingredients

3 tablespoons olive oil
3 garlic cloves , finely chopped
1 large poblano pepper , seeded and chopped ( green peppers can be substitued )
1 medium onion , finely chopped
1 can diced tomatoes
3 tablespoons finely chopped cilantro
10 spanish-style stuffed green olives , sliced
2 jalapenos , escabeche ( pickled , or substitute fresh , adjust to taste )
2 tablespoons sherry wine
2 tablespoons capers
1/2 teaspoon dried oregano
1/4 teaspoon dried thyme
1/4 teaspoon white pepper
6 red snapper fillets
2 tablespoons lime juice
salt & freshly ground black pepper
1/2 cup grated parmesan cheese
Red Snapper (Huachinango) in Veracruz Sauce is a classic dish from the coastal state of Veracruz in Mexico. Instructions

1.Heat 2 tablespoons of olive oil in a large saucepan over medium heat. Add the garlic, poblano pepper, and onion and cook until the vegetables are soft and the garlic is fragrant, about 5 minutes.
2.Add the canned tomatoes, cilantro, olives, jalapenos, sherry wine, capers, oregano, thyme, white pepper, and salt to taste. Bring the mixture to a simmer and cook for 10-15 minutes, until it has thickened slightly.
3.While the sauce is simmering, prepare the fish fillets. Season them with salt, black pepper, and lime juice.
4.In another large pan, heat the remaining tablespoon of olive oil over medium-high heat. Add the fillets, skin-side down, and cook for 2-3 minutes until the skin is browned and crispy.
5.Flip the fillets and cook for another 2-3 minutes, until the fish is cooked through and flaky.
6.To serve, place the fillets on a plate and spoon the Veracruz sauce on top. Sprinkle with parmesan cheese, if desired.
