Ingredients

4 bell peppers , deseeded and cut into large chunks
2 red onions , peeled and cut into wedges
6 garlic cloves , unpeeled
4 tablespoons balsamic vinegar
2 chicken legs
2 tablespoons mexican fajita seasoning mix
1 packet sweet potato , fries
1 lime , cut into wedges
1 drizzle olive oil
1 handful coriander

Instructions

1.Preheat oven to 220C or 200C fan forced.
2.Add the bell peppers, red onions, garlic cloves, and balsamic vinegar to a roasting tray, toss together and spread evenly.
3.Rub the chicken legs with the Mexican fajita seasoning mix, place them on top of the vegetables and then roast everything in the oven for about 25 minutes.
4.Add the sweet potato fries to the tray, drizzle olive oil over the vegetables and sprinkle with salt. Roast for an additional 10-15 minutes, until the vegetables are tender, the sweet potato fries are crispy, and the chicken is cooked through.
5.Once done, let the tray cool for a few minutes before serving. Squeeze lime wedges over the vegetables and chicken, sprinkle with chopped coriander and serve hot.
