Ingredients

2 lbs skirt steaks
1/4 onion
2 garlic cloves
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon chopped cilantro
1 -3 chipotle pepper ( use more peppers if you like the heat )
2 teaspoons adobo sauce
corn tortilla , shredded cheese , avocado , sour cream , lettuce , lime wedges , salsa ( not your standard store bought salsa ! )

Instructions

1.In a food processor, pulse onion, garlic, cumin, coriander, salt, pepper, cilantro, chipotle pepper, and adobo sauce until mixture forms into a smoothened paste.
2.Rub steak with the paste generously on both sides, then refrigerate it for an hour.
3.Preheat grill or grill pan over high heat, then place the steak on it for about 4-5 minutes per side, flipping once (or adjust the time according to the desired degree of doneness).
4.Remove steak from grill and let it rest for a few minutes.
5.Slice steak against the grain and serve on corn tortillas topped with shredded cheese, avocado slices, sour cream, lettuce, and salsa. Squeeze lime wedges over the tacos before serving.
