Ingredients

3/4 cup finely chopped onion
1 clove garlic , minced
2 teaspoons ground cumin
2 teaspoons chili powder
1 1/2 tablespoons vegetable oil ( plus additional for frying the chips )
1 lb ground chuck
1 can refried beans ( optional )
2 tablespoons tomato paste
6 7-inch corn tortillas , cut into 1-inch triangles
8 cups shredded romaine lettuce
3 tomatoes , cut into wedges
1 cup coarsely grated extra-sharp cheddar cheese
1/3 cup thinly sliced scallion
1 clove garlic , chopped
3 tablespoons red wine vinegar
3 tablespoons fresh lemon juice
1/2 teaspoon ground cumin
1/2 cup olive oil
2 tablespoons olive oil
1 cup chopped , seeded tomatoes
1 large jalapeno pepper , seeded and chopped
1/2 cup loosely packed fresh coriander
Taco Salad with Salsa Vinaigrette is a Mexican dish that is flavorful and healthy. The salad’s spiciness is due to the addition of jalapeno pepper and the garlic in the dressing that makes it stand out. Instructions

1.In a pan, saute onion and garlic until tender. Add cumin, chili powder and cook for 1 minute
2.2. Add ground chuck and cook for 8- 10 minutes until it turns brown. Mix in tomato paste and refried beans
3.In another pan, fry tortilla triangles in a cup of vegetable oil until light brown. Place triangles on a paper towel to cool and settle
4.4. To make the dressing, mix garlic, red wine vinegar, lemon juice, cumin and olive oil well in a blender. Add jalapeno pepper, chopped tomatoes and coriander.
5.5. Assemble the salad by placing lettuce in a bowl. Add tomato wedges, grated cheese and top with meat mixture.
6.6. Pour dressing on top of the salad and mix with tongs.
7.7. Spread the fried tortilla triangles on top of the salad and add sliced scallions before serving.
