1/4 cup balsamic vinegar

1/2 teaspoon pepper
1/2 tablespoon paprika
1/2 teaspoon cilantro
1 -2 teaspoon liquid smoke ( optional )
1 large red onion , quartered
2 red peppers , quartered
2 green peppers , quartered
4 large portabella mushrooms , gills scraped off
cherry tomatoes ( optional )
2 lbs skirt steaks , chicken breast ( deboned )
flour tortilla
shredded cheddar cheese
shredded lettuce , any other toppings you like

Instructions

1.Mix olive oil, lime juice, cumin, chili powder, curry powder, garlic, balsamic vinegar, onion powder, oregano, pepper, paprika, cilantro, and liquid smoke (optional) in a small bowl to make marinade.
2.Cut the skirt steak or chicken breast into long strips and add to the marinade. Set aside for at least 30 minutes or up to 12 hours in the refrigerator.
3.Preheat a grill pan or BBQ to high heat.
4.Grill the red onion, bell peppers, and portabella mushrooms until lightly charred and tender. Remove from grill and set aside.
5.Cook the steak or chicken on the grill for 2-3 minutes on each side or until cooked to desired doneness.
6.Warm the flour tortilla on the grill or over a stove flame for 30 seconds on each side.
7.Assemble your fajitas with the grilled vegetables, meat, shredded cheddar cheese, shredded lettuce, and any other toppings you like.
