Ingredients

1/2 lb chorizo sausage , diced
1 roasted red pepper , diced ( I use jarred )
8 -10 marinated artichoke hearts , drained and diced
4 6-inch corn tortillas , warmed
3 cloves garlic , minced
3 cups grated cheese ( I use a mexican blend )
2 scallions , sliced thinly ( I 've also used shallots , thinly sliced )
1 tomatoes , diced
fresh cilantro , chopped for garnish
sour cream ( optional )

Instructions

1.Preheat your oven to 375°F (190°C).

3.In the same skillet, add the garlic and cook it until it is fragrant, about 1 minute.

6.Bake the tostadas for about 5-7 minutes, or until the cheese is melted and bubbly.
7.Top with diced tomatoes, scallions and chopped cilantro. Serve with sour cream on the side if desired.
