Ingredients

1 can ranch style black beans
1/2 teaspoon fajita seasoning mix
5 tablespoons vegetable oil for frying tortillas
12 flour tortillas
1/2 lb cooked chorizo sausage
1/2 lb fajita chicken strips
1 red bell pepper , cut into strips
4 ounces cheddar cheese
1 white onion , cut into strips
4 ounces cheddar cheese
1 cup sour cream
2 tablespoons chopped cilantro

This dish is traditionally made with flour tortillas stuffed with a mixture of chicken fajita, chorizo, vegetables and ranch-style black beans, then smothered in cheese and baked until golden and bubbly. Instructions

1.Preheat your oven to 375 degrees Fahrenheit.
2.In a bowl, mix the black beans and fajita seasoning mix together and set aside.

8.Spread a heaping tablespoon of the filling mixture onto each tortilla and roll it up tightly. Place them seam-side down into the baking dish.
9.Cover the tortillas with the remaining black bean mixture, and sprinkle with cheddar cheese.
10.Bake the fajiladas in the oven for about 20-25 minutes, or until the cheese is melted and bubbly.
11.Remove from the oven and allow to cool for a few minutes before serving.
12.Garnish with chopped cilantro and a dollop of sour cream (optional). Serve and enjoy!
