Ingredients

2 lbs ground beef
1 small onion , chopped
1 envelope taco seasoning
1 1/2 cups water
2 jars salsa ( we used Sam 's Choice black bean & corn salsa from Wal-Mart )
1 can corn kernels , drained
8 ounces shredded cheddar cheese
1 bag of danced-on tortilla chips

Instructions

1.Preheat the oven to 400°F.
2.In a large skillet, cook the ground beef and onion until the beef is no longer pink. Drain any excess fat.
3.Add the taco seasoning and water. Bring to a boil then reduce the heat and simmer until the mixture thickens, about 10 minutes.
4.In a large bowl, mix together the beef mixture, salsa and corn.
5.Grease a 13 x 9 x 2 inch baking dish then layer the bottom with 1/3 of the chips. Spread half of the beef mixture on top followed by another 1/3 of the chips. Repeat with the remaining beef mixture and finish with a layer of chips.
6.Top the chips with the shredded cheese.
7.Bake in the preheated oven for 25-30 minutes until the cheese is melted and bubbly. Let it cool for a few minutes before slicing and serving.
