Don Fernando's Green Chile Stew is a popular traditional dish in the southwestern United States, particularly in New Mexico. It is a spicy and hearty stew that is traditionally made with roasted and chopped poblano peppers and cubed pork or beef. This recipe adds ground chuck, ground pork, and boneless sirloin to create a flavorful and protein-packed meal. It is perfect for cold winter nights or as a spicy alternative to traditional beef stews. The use of Mexican beer adds an extra layer of flavor to this dish, and the warm tortillas or crusty bread serve as the perfect accompaniment to wipe up the remaining spoonfuls of spicy broth.

Instructions

1.Place a large pot or dutch oven over medium-high heat and brown the ground chuck, ground pork, and cubed sirloin in batches until fully cooked. Remove the meat and set aside.
2.In the same pot, melt 2 tablespoons of butter and sauté the chopped onions until translucent. Add the minced garlic and sauté for another minute.
3.Add the flour to the pot and stir until well combined with the onion and garlic mixture.
4.Add the roasted and chopped poblano peppers, chopped tomato, and fresh cilantro to the pot, stir to combine.
5.Add the cooked meat back to the pot along with the chicken broth, mexican beer, Tabasco sauce, oregano, cumin, parsley, salt, and black pepper. Stir well and bring to a boil. Lower the heat and simmer for 30 minutes.
6.Serve hot with warm tortillas or crusty bread.
