1 large ripe avocado
2 cups monterey jack cheese , shredded
1 package round won ton dumpling wraps
oil ( for deep frying )

Instructions

1.In a pan, sauté the diced onion and minced garlic in olive oil until the onion becomes translucent.
2.Add the rinsed and drained pinto beans and black beans, along with the drained diced tomatoes and corn.

4.Stir in the package of hot and spicy taco seasoning and 2 teaspoons of cumin.
5.Cook all of the ingredients over medium heat for 20 minutes, stirring occasionally, then remove from heat.
6.Peel and dice the large ripe avocado, and set aside.
7.Deep fry the round won ton dumpling wraps in oil until golden brown.
8.Stuff each won ton with a spoonful of the veggie mixture, a sprinkle of shredded Monterey jack cheese, and a small handful of diced avocado.
9.Serve the veggie wonton-Adas warm with your favorite dipping sauce.
