Ingredients

1 tablespoon oil , for sauteeing
1/2 onion , diced
1 teaspoon minced garlic
1 can whole green chilies , diced
1 lb lean ground beef or 1 lb turkey
1 cup canned corn kernel ( or fresh off-the-cob corn 2 ears )
1/4 cup sour cream ( optional )
2 cans old el paso enchilada sauce ( mild , medium or hot )
2 cups monterey jack cheese , shredded
12 corn tortillas ( avoid the ones labeled thin , they tear and break )
vegetable oil
canned jalapeno slices , black olives ( optional )
Beef enchiladas are a popular Mexican dish made with beef, corn tortillas, and cheese. Traditionally a fairly messy dish to prepare, this recipe uses canned green chilies, ready-made sauce, and no-fry tortillas to make the process easier. Ground beef is browned with onions and garlic, then mixed with corn, sour cream, and enchilada sauce. The mixture is then rolled up in tortillas and baked in the oven with more sauce and cheese on top. This is a great meal to serve for dinner or lunch, and the leftovers can be easily reheated for a second meal.

Instructions

1.Preheat oven to 375°F (190°C).
2.Heat 1 tablespoon of oil in a large skillet. Add diced onions and cook for 2-3 minutes over medium heat, then add minced garlic and cook for an additional 1-2 minutes.
3.Add in diced green chilies and ground beef or turkey. Cook until the meat is browned and fully cooked.
4.Stir in canned corn, 1/4 cup of sour cream, and 1 can of enchilada sauce.
5.Spread a layer of the remaining enchilada sauce in a 9x13 inch baking dish.
6.To assemble the enchiladas, spoon beef mixture down the center of each tortilla and roll up. Place seam side down in the baking dish.
7.Pour the remaining enchilada sauce on top of the rolled tortillas.
8.Sprinkle cheese on top of the sauce.
9.Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
