Ingredients

4 big ripe mangoes
8 ounces mascarpone cheese
8 ounces plain yogurt
1 1/2 teaspoons ground ginger
1 lemon , juice and grated rind
1 tablespoon white rum ( optional )
6 tablespoons brown sugar
1 tablespoon unsalted butter
2 sprigs fresh mint leaves , to decorate ( optional )
Mango and Mascarpone Brulee is a tropical twist on a classic French dessert. The sweet, juicy chunks of mango pair perfectly with rich, creamy mascarpone and the crunchy caramelized sugar topping. Instructions

1.Preheat the oven to 350°F.

6.Place the ramekins on a baking sheet and bake for 20-25 minutes, or until the brulees are golden and bubbly.
7.Let them cool slightly, then chill them in the refrigerator for at least an hour. Before serving, sprinkle some additional brown sugar on top of each ramekin and use a blowtorch to caramelize the sugar until golden brown.
8.Garnish each brulee with a sprig of fresh mint leaves, if desired.
