Ingredients

1 1 lb bacon , crumbled ( try Recipe # 242966 for easy bacon bits ) or 1 lb breakfast sausage , browned
8 large eggs , scrambled
4 -5 large potatoes , peeled and diced
1 small onion , diced
1 small bell pepper , diced
salt
black pepper
garlic powder
10 flour tortillas
2 cups green chili sauce ( canned green enchilada sauce works well if you do n't wish to make green chili )
2 cups shredded cheese

Instructions

1.Preheat oven to 375°F.

3.In same skillet add the diced potatoes, onion, and bell pepper.
4.When potatoes are done, add in the scrambled eggs and season with salt, black pepper and garlic powder to taste. Stir mixture well.
5.Line the bottom of a 9 x 13 inch baking dish with flour tortillas (you may have to cut some to fit). Layer the bacon or breakfast sausage over the tortillas. Spoon the egg mixture over the top of the bacon/sausage. Pour the green chili sauce over the egg mixture and top with shredded cheese.
6.Bake in preheated oven for 25-30 minutes until cheese is melted and bubbly. Let sit for a few minutes before serving.
