2 cans black beans , drained , rinsed and divided

1 chipotle chile in adobo
1 medium onion , finely diced
1/2 - 2/3 cup cornmeal ( plus more , as needed ) or 1/2-2/3 cup panko breadcrumbs ( plus more , as needed )
salt and pepper
canola oil or vegetable oil
2 teaspoons canola oil
2 cups corn kernels
1 garlic clove , minced
1 jalapeno , seeded and minced
1 medium tomatoes , seeded and diced
1 lime , juice of

Instructions

1.In a food processor, blend 1 can of black beans, 1 roasted red pepper, eggs, oregano, cumin, chipotle chile until well combined.
2.In a bowl, mix together onion, remaining black beans, cornmeal or breadcrumbs, salt, pepper, and the mixture from the food processor.
3.Form the mixture into patties and refrigerate for at least 30 minutes.
4.In a frying pan, heat canola oil over medium-high heat. Fry the patties on each side for 2-3 minutes until golden brown.
5.To make the corn relish, heat 2 teaspoons of canola oil in a pan. Add the corn, jalapeno, garlic, and tomato. Cook for a few minutes and stir in lime juice, cilantro, salt, and pepper to taste.
6.To make the avocado cream, blend avocado, Greek yogurt or light sour cream, lime juice, salt, and pepper until smooth.
7.Serve the patties with corn relish and avocado cream.
