Instructions

1.Cook elbow macaroni according to package instructions and set aside.

4.Add Rotel tomatoes & chilies, taco seasoning mix, drained corn, and drained jalapeno black-eyed peas and stir well.
5.Add cooked macaroni, sour cream, and half of the Mexican blend cheese.
6.Stir until well combined and cheese is melted.
7.Top with crushed tortilla chips and remaining cheese.
8.Broil until cheese is melted and bubbly, about 1-2 minutes.
