Ingredients

1 1/2 lbs ground beef or 1 1/2 lbs ground turkey
1 large onion , chopped
1 small green bell pepper , seeded and chopped
2 tablespoons fresh minced garlic ( or to taste )
seasoned salt and black pepper ( to taste )
1 -2 jalapeno pepper , seeded and finely chopped ( optional or to taste )
1 package taco seasoning mix
1 jar salsa ( mild or spicy )
3 flour tortillas
1 container sour cream ( can use more or less )
2 cups shredded cheddar cheese ( can use more or less )
1 can diced green chilies ( I usually use 2 cans )
Kittencal's Enchilada Stack is a twist on a classic Mexican dish that is easy to make and full of delicious flavors. The layers of tortillas, meat, cheese, sour cream, and salsa make for a beautiful presentation that is sure to impress your guests. This dish is perfect for feeding a crowd and can be customized to your spice preference.

Instructions

1.Preheat oven to 350 degrees F.
2.In a skillet, cook the ground beef (or turkey) with the onion, bell pepper, garlic, and jalapeno pepper until the meat is browned and the vegetables are tender, breaking up the meat with a spoon.
3.Add taco seasoning mix and salsa to the skillet, stirring to combine.
4.Spray a 9-inch springform pan with nonstick cooking spray.
5.Place one tortilla in the bottom of the prepared pan, spreading it with sour cream.
6.Spoon 1/3 of the meat mixture on top of the sour cream, sprinkle with shredded cheese, and top with a few of the green chilies.
7.Repeat layers with the remaining ingredients, ending with shredded cheese and green chilies on the top.
8.Bake the enchilada stack in the preheated oven for 30-35 minutes or until the cheese is melted and bubbly.
9.Remove from the oven and let cool for 5 minutes before removing the springform pan sides and slicing into wedges.

PROS
