Ingredients

1 1/2 cups white flour
1 cup wheat flour ( you can use all white if wanted though )
1/2 teaspoon salt
1 cup butter , chilled and diced
1/2 cup cold water
2 -3 tablespoons olive oil ( although veggie oil works too )
1/4 cup black olives , pitted , sliced
1 lb ground lean meat ( I used beef , but turkey will substitute just fine )
1 tomatoes , crushed
4 hard-boiled eggs , diced
2 garlic cloves , minced
2 green onions , chopped
optional spices
1 teaspoon dried oregano
1/2 teaspoon coriander
1 teaspoon cumin
1/2 teaspoon black pepper
1/2 teaspoon cayenne
1 teaspoon chili powder
1 teaspoon salt

Instructions

1.In a large bowl, mix the white flour, wheat flour, and salt together until combined.
2.Add the butter to the dry ingredients and use a pastry cutter or fork to cut it in until the mixture resembles coarse crumbs.
3.Slowly add in the cold water and mix until a dough forms. Knead the dough for a few minutes until smooth.
4.In a separate pan, heat the olive oil over medium heat. Add in the ground meat, garlic, and green onions and cook until the meat is browned.
5.Add in the tomatoes, olives, spices, and hard-boiled eggs to the meat mixture and stir until combined.
6.Preheat the oven to 350°F. Roll out the dough into circles and place a spoonful of the meat mixture in the center.
7.Fold the dough over and use a fork to seal the edges. Lightly brush the empanadas with egg wash and bake for 20-25 minutes or until golden brown.
