Ingredients

120 g quick cook polenta
1 egg
450 ml milk
120 g cheddar cheese
4 tablespoons chopped fresh coriander
1 tablespoon vegetable oil
2 large red onions , roughly chopped
2 garlic cloves , crushed
50 g pickled hot red chilies , roughly chopped
350 g quorn mincemeat
400 g chopped tomatoes
2 tablespoons tomato puree
400 g kidney beans , drained and rinsed
250 ml vegetable stock
grated lime , juice and zest of
salt & freshly ground black pepper
Hot Mexican Tamale Bean Pie is a vegan-friendly dish that originated in Mexico. It is a fusion of Mexican and American cuisine, consisting of a polenta crust filled with a spicy bean mixture. The bean mixture includes quorn mincemeat and kidney beans, providing a great source of protein, fiber, and essential vitamins and minerals. Instructions

1.Preheat the oven to 200°C and grease a 20 cm round baking dish.
2.In a saucepan, add the polenta along with milk and cook on a medium heat, until the polenta thickens.
3.Remove from the heat and add egg, cheddar cheese, chopped coriander and salt. Mix well and pour into the prepared dish.
4.In a large frying pan, heat vegetable oil and add onions, garlic and red chilies. Cook until the onions soften.
5.Add quorn mincemeat and cook until browned. Stir in chopped tomatoes, tomato puree and vegetable stock. Cook for 10 minutes.
6.Add kidney beans and grated lime zest. Cook for another 5 minutes.
7.Pour the bean mixture on top of the polenta mixture in the baking dish and lightly press it down.
8.Bake in the oven for 30-35mins. Garnish with chopped coriander and lime juice before serving.
