8 corn tortillas
1 lb sharp cheddar cheese , shredded
1/2 onion , chopped
2 tablespoons butter
2 tablespoons flour
5 teaspoons red chili powder
2 teaspoons cumin
2 teaspoons garlic powder
3 teaspoons garlic salt
1 teaspoon salt
1 teaspoon pepper
1 teaspoon cayenne
1 teaspoon onion powder
1 pinch cinnamon
6 ounces tomato paste
2 1/2 cups water

Instructions

1.Season the carnita meat with salt, pepper, cayenne, cumin, garlic salt, garlic powder, onion powder, and cinnamon, and add to a slow cooker with onion, garlic and tomato paste with 2 cups of water. Cook on low for 7 to 8 hours.
2.While the meat is cooking, melt butter in a saucepan and add flour. Cook for 1-2 minutes until golden brown. Add red chili powder, cumin, garlic powder, garlic salt, salt, pepper, cayenne, onion powder, and cinnamon with tomato paste and water. Cook for 10-12 minutes to thicken the sauce.
3.Preheat the oven to 350°F.
4.Heat the corn tortillas on both sides on a griddle.
5.When the carnita meat is done cooking, remove it from the slow cooker and shred it with a fork.
6.Dip each tortilla into the red chili sauce, add carnita meat, and shredded cheddar cheese to the center. Roll up each tortilla around the filling.
7.Place the filled tortillas in a baking dish, seam side down.
8.Pour the remaining red chili sauce on top of the tortillas.
9.Sprinkle the remaining cheddar cheese on top of the sauce.
10.Bake in the oven for 25-30 minutes until the cheese is melted and bubbly.
