1 cup shredded longhorn cheese

1 can black olives , chopped
2 cans tomato sauce
1 can tomato paste
1 can tomato soup
2 cups water
1/2 cup oil
2 tablespoons chili powder
1 teaspoon garlic powder
1/2 teaspoon salt
12 tortillas ( flour or corn )

West Of The Pecos Enchiladas are a classic Tex-Mex dish that originated in the Pecos region of west Texas. Instructions

1.Preheat oven to 350°F (175°C).
2.In a large skillet, brown ground beef over medium heat, seasoning with 1/2 teaspoon salt. Drain any excess grease.
3.Add chopped onion, black olives, tomato sauce, tomato paste, tomato soup, water, oil, chili powder, garlic powder, and 1/2 teaspoon salt. Mix well.
4.Reduce heat and simmer for 15 to 20 minutes.
5.In a separate skillet, lightly fry each tortilla in oil.
6.In a 9 x 13 inch baking dish, spoon some of the beef mixture into each tortilla and roll up. Place seam-side down in the baking dish.
7.Top with remaining beef mixture and shredded longhorn cheese.
8.Cover baking dish with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
