Chilies Rellenos Con Picadillo is a traditional Mexican dish that is popular in many Latin American countries. The dish consists of roasted green chilies filled with a mixture of ground beef, spices, and tomato sauce, then battered and fried until golden brown. It is often served with warm tomato sauce and a garnish of sliced almonds. The dish is relatively easy to make and can be customized to suit individual tastes, whether you prefer mild or spicy chilies. It's a great meal for a family gathering or a festive occasion.

Instructions

.Rinse the chilies under cold running water and pat dry with paper towels. Cut a slit lengthwise in each chili and remove the seeds, leaving the stem intact. Set aside.
.In a large skillet, cook the ground beef and onion over medium heat until browned. Drain off any fat.
.Stir in the sherry, cinnamon, cloves, and cumin. Cook for 1 minute.
.Add the chopped tomatoes with their juice, sugar, vinegar, and cilantro. Bring to a boil, then reduce the heat and simmer for 20-25 minutes, or until the sauce has thickened.
.Spoon the meat mixture into the chilies and press the edges together to seal.
.Place the flour on a large plate.
.In a bowl, whisk the egg yolks, water, and a pinch of salt until frothy. In a separate bowl, whisk the egg whites until stiff peaks form.
.Dip the stuffed chilies into the flour, shaking off any excess.
.Dip the chilies into the egg yolks, then into the egg whites, making sure they are well-coated.
.Pour oil into a large skillet to a depth of 1 inch. Heat over medium-high heat until hot.
.Fry the chilies, turning once, for 3-4 minutes on each side, or until golden brown. Drain on paper towels.
.Serve with warm tomato sauce and sprinkle with sliced almonds.
