PROS

Mexican Fiesta Casserole is delicious, cheesy, and flavorful.
It’s a one-pan dish that’s easy to prepare, and leftovers can be refrigerated and reheated the following day.

This recipe is a great way to sneak veggies into your meal while still indulging in a comfort food.

CONS

It is high in calories, fat, and sodium, which makes it an occasional treat rather than a daily meal.

The Bisquick baking mix and mayonnaise also make it less of a healthy option.

HEALTH & BENEFITS

While not particularly healthy on its own, the Mexican Fiesta Casserole can be modified by using ground turkey or chicken instead of beef, and by reducing the amount of cheese and mayonnaise added. This recipe is a great source of protein and vegetables, which helps you to get your daily nutrient requirements. Black olives contain healthy monounsaturated fats and antioxidants that have been linked to reducing the risk of heart disease.
