Instructions

1.Combine onion, garlic, carrot, ground beef, uncooked rice, mint, salt, lemon pepper, and beaten egg in a bowl. Mix well with your hands.
2.Form mixture into small meatballs.
3.Heat a large soup pot over medium-high heat. Add meatballs and brown on all sides for 3-4 minutes. Remove meatballs from the pot and drain the excess fat.
4.In the same pot, add onion, celery, garlic, and mint. Cook for 2-3 minutes until vegetables are slightly softened.
5.Add chicken bouillon, tomato sauce, yukon gold potatoes, carrots, salt, lemon pepper, and water to the pot. Bring to a boil, then reduce the heat to low. Cover and let it simmer for 30-40 minutes.
6.Add meatballs back to the soup and let it simmer for another 10 minutes. Serve hot and enjoy!
