Sweet Corn Tamale Cakes are a modern twist on an ancient Mexican food staple: tamales. While traditional tamales involve steaming masa dough filled with meat, cheese, or vegetables in a corn husk, Sweet Corn Tamale Cakes are pan-fried for a crispy exterior and soft, tender interior. They are made with masa harina (a type of corn flour), sweet corn, and a touch of sugar, giving them a slightly sweet, slightly savory flavor. They are then topped with two types of fresh salsa- a tangy tomatillo salsa and a fresh tomato salsa- as well as creamy avocado and fresh cilantro. These tamale cakes are a delicious, fun way to enjoy the flavors of Mexico in a new way. They are perfect for a casual dinner with friends, or as a festive addition to a Mexican-themed party or celebration.
