Ingredients

1/2 medium onion
1/2 green bell pepper
1 lb hamburger
1 package taco seasoning
3 cups shell noodles
2 tablespoons butter
1 1/2 tablespoons flour
2 cups milk
1 cup low-fat cream cheese , softened
1 teaspoon ground black pepper
1 cup mozzarella cheese
2 cups monterey jack and cheddar cheese blend
1 tablespoon butter , melted
1 tablespoon hot sauce
3/4 cup crushed Cheez-It crackers
1 package bacon bits
1/2 cup mozzarella cheese
This casserole combines some of the best flavors: smoky bacon, creamy cheese, and spicy taco seasoning, all mixed with noodles. Adding ground beef gives an extra blast of protein, thus a lot of good nutrients. It's relatively easy to make and will take less than an hour to prepare. Perfect to serve on a relaxing weekend night with your family or friends. Make sure to inform your guests it is spicy to cater to their taste preferences.

Instructions

1.Boil shell noodles according to instructions on the package and drain.
2.Heat the oven to 350°F.
3.In a frying pan, cook onion, green pepper, and hamburger until golden brown.
4.Add taco seasoning and water as per the instructions on the package.
5.Simmer for 5 minutes.
6.In a separate saucepan, over medium heat, melt butter and whisk in flour until it becomes golden brown.
7.Add milk and cream cheese to the saucepan and stir constantly until the mixture smoothens.
8.Add pepper and some of the shredded cheese.
9.Mix the noodles and beef mixture with the cheese sauce.
10.Pour the mixture into into a greased 9x13 baking dish.
11.In a small bowl, mix crushed Cheez-It crackers, bacon bits, melted butter, and hot sauce.
12.Pour and spread the mixture over the baking dish.
13.Bake for 20 to 25 minutes.
14.Once done, let it cool for a few minutes before serving.

This recipe makes a decadent and delicious macaroni and cheese with the added bonus of beef and taco seasoning.
