2 cups whole milk
1/2 cup sugar
1/4 teaspoon salt
1 cup pineapple juice
1 tablespoon cornstarch
2 egg yolks , lightly beaten
1 teaspoon nutmeg , freshly grated

Instructions

1.In a medium saucepan, combine milk, sugar, and salt. Cook over medium-high heat stirring constantly until it comes to a boil.
2.In a small bowl, mix cornstarch and pineapple juice until dissolved. Add to the boiling milk mixture and whisk for 1 minute until smooth.
3.In a separate bowl, whisk egg yolks until smooth. Slowly pour 1/2 cup of the hot milk mixture into the egg yolks and whisk quickly to temper eggs.
4.Pour the egg mixture into the saucepan with the rest of the hot milk mixture, and whisk quickly to combine.
5.Cook over medium heat for 5 minutes or until the mixture thickens and coats the back of a spoon. Do not let the custard boil.
6.Remove from heat and stir in nutmeg.
7.Pour the mixture into a shallow dish or individual ramekins and refrigerate for at least an hour before serving.
