Ingredients

1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon pepper
1 cup dark Mexican beer ( I used Negra Modelo )
1/3 cup mayonnaise
2/3 cup sour cream
1 teaspoon grated lemon zest
2 tablespoons of fresh lemon juice
2 tablespoons water
salt & pepper
oil ( for frying )
1 cup all-purpose flour

2 lbs , white fish cut into 5 by 1/2 inch strips ( I used Tilapia but Halibut would work )

Baja-style fish tacos originated in the coastal region of Baja California, Mexico. They are a popular street food that has become a favorite in the United States and beyond. These tacos are made with fresh white fish that is dipped in a beer batter and fried until crispy and golden brown. Instructions

1.In a medium mixing bowl, whisk together flour, salt, and pepper. Gradually whisk in enough beer to form a smooth and thick batter.
2.In a small mixing bowl, whisk together mayonnaise, sour cream, lemon zest, lemon juice, and water. Season to taste with salt and pepper.
3.Heat about an inch of oil in a large, heavy-bottomed skillet over medium heat. Season the fish strips with salt and pepper. In a shallow dish, combine flour and salt. Dredge the fish strips in the flour mixture, shaking off any excess.
4.Dip the fish strips into the beer batter and let the excess drip off. Fry the fish in the hot oil, turning occasionally, until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
5.To assemble the tacos, warm the corn tortillas in the oven or microwave. Fill each tortilla with some shredded cabbage, a few pieces of fried fish, and a dollop of mayonnaise mixture. Top with salsa or guacamole, if desired.
