Ingredients

4 boneless skinless chicken breasts
1 can diced tomatoes with green chilies
1 1/3 cups shredded cheddar cheese
1 1/3 cups shredded white American cheese
10 flour tortillas
1/2 cup chopped jalapeno
1/2 cup sliced green onion
1/2 cup sliced black olives
2 tablespoons melted butter
Stacked Chicken Quesadillas are a Mexican-inspired dish that consists of layers of tortillas, chicken, cheese, and veggies that are baked to perfection. Each bite is packed with flavor and the combination of ingredients makes it a filling and satisfying meal. Instructions

1.Preheat oven to 375°F (190°C).
2.Season chicken breasts with salt and pepper to taste and bake in a preheated oven for 25-30 minutes or until they are fully cooked.
3.In a medium bowl, combine diced tomatoes, jalapeno, green onion, and black olives.
4.Spread melted butter on one side of each tortilla and place it buttered side down in a baking dish.
5.Add a layer of cheddar cheese, diced chicken, and then a layer of tomato mixture on top of each tortilla in the dish.
6.Repeat step 5 until you finish with a layer of tortillas on top.
7.Sprinkle shredded white American cheese over the top layer of tortillas.
8.Cover the baking dish with foil and bake for 20 minutes.
9.Remove the foil and bake for another 15 minutes until the cheese is melted and bubbly.
10.Let cool for several minutes and then slice into 8 pieces to serve.
