1/2 cup chopped cilantro
8 ounces smoked sausage , sliced thin
6 -8 pickled jalapeno peppers , slices
1/4 cup diced red bell pepper

Instructions

1.Preheat the oven to 375°F (190°C).
2.Grease a 9-inch (23cm) pie dish with cooking spray.
3.Squeeze the chorizo from the casings and cook in a pan over medium heat until browned.
4.Add Simply Potatoes & reg; Shredded Hash Browns and 2 teaspoons of taco seasoning to the pan and mix together.
5.Press the potato and chorizo mix into the bottom and sides of the prepared dish to form a nest.
6.In a bowl, whisk together eggs, cumin, remaining taco seasoning, and half-and-half.
7.Stir in queso blanco, cilantro, and sliced smoked sausage.
8.Pour the mixture into the potato nest.
9.Scatter pickled jalapenos and diced red bell pepper over the top.
10.Bake for 35 to 40 minutes or until cooked through.
