Chasen's Famous Chili is a legendary recipe from the 1930s that was once the favorite of Hollywood's brightest stars, including Elizabeth Taylor and Clark Gable. Originally created by the Hollywood restaurateur, Dave Chasen, the dish was known for its rich tomato flavor, tender chunks of beef, and spicy kick. Chasen's closed its doors in 1995, but its recipe lives on as a classic American dish, often made for gatherings and potlucks. The recipe is relatively easy to make but requires patience, as the chili needs to simmer for a while to develop its depth of flavor. Once the dish is ready, it's best served with a dollop of sour cream, a sprinkle of cheese, and a slice of cornbread on the side.

Instructions

.Rinse the pinto beans and soak them in cold water overnight.
.Drain the beans, add them to a large pot, and cover with fresh water.
.Bring the water to a boil, then reduce the heat and simmer until the beans are tender (about 2 hours).
.Drain the beans and set them aside.
.In a separate pot, sauté the onions, garlic, and green bell pepper in vegetable oil until the vegetables are tender.
.Add the beef and pork to the pot and cook until browned.
.Add the cooked beans, canned tomatoes, chili powder, salt, pepper, cumin, and parsley to the pot.
.Simmer for at least 2 hours or until the chili has thickened to your desired consistency.
.Serve hot with sour cream, grated cheese, diced onions, and/or cornbread.
