1 lb extra lean ground beef
1 onion , chopped
2 teaspoons garlic , minced
1 package taco seasoning
2 1/2 cups diced tomatoes , canned
5 cups cabbage , fresh and shredded
5 ounces low-fat cheddar cheese
5 tablespoons fat free sour cream
10 flour tortillas

Instructions

1.Cook extra lean ground beef over medium heat in a skillet until brown and stir in onions and garlic.
2.Add taco seasoning and diced tomatoes and stir well. Let it cook for 3-4 minutes.
3.Throw in the shredded cabbage and toss it with the beef mixture. Cover the skillet and let it cook for another 10-12 minutes.
4.Preheat the oven to 400 degrees F.
5.Lay the tortillas in a circle in the skillet and bake them for around 5-7 minutes until they are crispy and golden brown.
6.Sprinkle cheddar cheese on top of the crisped tortillas and return it to the oven until the cheese is melted, around 3-4 minutes.
