Ingredients

2 tablespoons vegetable oil
1 medium onion , chopped
1 medium green bell pepper , chopped
3 stalks celery , chopped
4 cups water
1 cup dried lentils ( green or brown )
1 1/2 cups cooked rice ( brown rice is recommended )
1 can tomato paste
1 package taco seasoning mix
1 teaspoon chili powder ( or to taste )
1/2 cup crushed tortilla chips
1/2 cup shredded cheddar cheese or 1/2 cup monterey jack cheese
This Mexican lentil casserole is a delicious and nutritious dish that is perfect for a busy weeknight dinner. This vegetarian meal is packed with flavor and is sure to satisfy your hunger. Instructions

1.Rinse the lentils and add them to a pot with 4 cups water. Bring to a boil, reduce the heat, and simmer for 20-25 minutes, or until the lentils are tender.
2.In a skillet, heat 2 tbsp of vegetable oil and cook the onion, bell pepper, and celery until the vegetables are soft and tender.
3.In the same skillet, add the tomato paste, taco seasoning mix, and chili powder. Cook for 2-3 minutes and then add the cooked lentils and cooked rice. Mix well.
4.Preheat the oven to 375°F. In a 9x13 inch baking dish, pour in the lentil and rice mixture. Top with tortilla chips and shredded cheese.
5.Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
