2 garlic cloves , chopped
1 teaspoon chicken bouillon ( look for product with no msg )
1 teaspoon cumin
1 can Rotel tomatoes & chilies ( comes in Mild , Medium and Hot )

Instructions

1.Cook the cauliflower by boiling or roasting it until tender. Chop or rice the cauliflower once cooked.
2.In a pan, heat the canola oil over medium heat.
3.Add chopped onion, mushroom, and garlic to the pan. Cook until the onion is translucent.
4.Add chicken bouillon and cumin to the pan. Stir well.
5.Add the can of Rotel tomatoes and chilies to the pan. Mix well.
6.Add the chopped cauliflower to the pan. Mix all the ingredients together.
7.Cook for 5 to 7 minutes, until the cauliflower is heated through. Serve hot.
