2 -3 cooked chicken breasts , diced
2 cans mild red enchilada sauce
8 ounces sour cream
12 ounces evaporated milk
2 cups shredded cheddar cheese
4 ounces diced green chilies , undrained
1 package corn tortillas ( 12 tortillas )

Instructions

1.Preheat oven to 350°F.
2.In a saucepan, bring enchilada sauce to a boil. Reduce heat, stir in sour cream, evaporated milk, and cheddar cheese until the cheese is melted.
3.Stir in diced green chilies.
4.Spray a 9x13 inch baking dish with non-stick cooking spray.
5.Spread 1/3 of the sauce into the bottom of the dish.
6.Top with a layer of tortillas.
7.Add half of the diced chicken on top of the tortillas, and 1/3 more of the sauce on top of the chicken.
8.Repeat with another layer of tortillas, the rest of the chicken, and another 1/3 of the sauce.
9.Add the final layer of tortillas on top, and pour the final 1/3 of the sauce on top of the tortillas.
10.Bake for 35-40 minutes, or until heated through and bubbly.
11.Let stand for 10 minutes before serving.
