9 large white flour tortillas
3 cups cooked white rice
3 cups cooked chicken , can mix dark and light meat
2 1/2 cups monterey jack cheese
2 cans mild green enchilada sauce
3 tablespoons cooking oil
1 green pepper , sliced
1 mild red pepper , sliced
1 onion , sliced

Instructions

1.Preheat oven to 350°F. Lightly grease a 13x9 inch baking dish.

3.In a heated skillet, sauté onion and peppers in cooking oil until soft. Add remaining can of enchilada sauce and cook until heated through.
4.Spoon about 1/2 cup of sauce mixture down center of each tortilla. Roll up tortillas and place seam side down in prepared dish.
5.Pour remaining sauce over enchiladas and sprinkle with remaining cheese. Cover with foil and bake for 25 minutes. Remove foil and continue baking for additional 10 minutes or until cheese is melted and bubbly.
