Ingredients

2 slices whole wheat bread ( or whole grain bread )
2 teaspoons olive oil
2 large eggs
salt
pepper
2 tablespoons finely shredded Mexican blend cheese
2 tablespoons black bean-corn salsa ( or your favorite salsa )
1 tablespoon crushed tortilla chips
The Nacho Toad-In-The-Hole is a twist on the traditional British dish, Toad-In-The-Hole, which uses sausages instead of bread and eggs. This recipe adds a Mexican twist with the use of Mexican blend cheese and salsa. This dish is great for a quick breakfast or lunch, especially when served with a side salad.

Instructions

1.Preheat oven to 350F.
2.Using a rolling pin, or your hands, flatten the bread slices so they are thin.
3.Brush olive oil on both sides of the bread slices, and lay them flat on a non-stick baking sheet.
4.Press the bread slices to form a dip in the center (toad-in-the-hole).
5.Break an egg into the center of each bread slice.
6.Sprinkle with salt, pepper, and Mexican blend cheese.
7.Spoon black bean-corn salsa on top of each egg, and sprinkle with crushed tortilla chips.
8.Bake for 10-12 minutes or until the egg whites are set.
