1 3/4 cups cubed peeled ripe mangoes
3 tablespoons chopped fresh cilantro , divided

1 flour tortillas

Instructions

1.Finely chop one quarter of the red onion and put it in a small bowl.
2.Add 1/2 cup cubed mango, 1 tablespoon cilantro, 1 tablespoon lime juice, 1/8 teaspoon salt and cayenne pepper to the bowl.
3.Toss well, then refrigerate.
4.Heat oil in a medium nonstick pan over medium-high heat.
5.Add shrimp, black pepper and a pinch of salt.
6.Cook for 3 minutes or until done, stirring frequently.
7.Add 1 tablespoon lime juice, stirring to coat.
8.Wrap tortillas in damp paper towels and microwave on high for 45 seconds.
9.Top each with about 2 tablespoons salsa, 2 shrimp and 1 1/2 teaspoons sour cream. Fold gently and serve immediately.
