Ingredients

1 lb chicken breast , chopped into 1/2 inch cubes
2 teaspoons olive oil
1 large onion , diced
1 can Mexican-style tomatoes ( go for plain , low sugar canned tomatoes if on the South Beach diet )
1 jar salsa ( we use southwestern style )
7 garlic cloves , chopped finely
1 1/2 teaspoons oregano leaves
1 teaspoon paprika
2 tablespoons cumin powder ( or to taste )
1/2 teaspoon salt ( to taste )
1 can black beans , rinsed ( can increase to 2 cans )
2 containers fat free chicken broth
1/2 lb frozen corn ( omit if on the South Beach diet )
1/2 lb frozen cut green beans
1/4 cup cilantro leaf , chopped finely ( optional )
2 cups Minute brown rice , cooked ( omit if on phase 1 of the South Beach diet )
This Southwestern-style soup is a hearty, comforting dish that's perfect for cold winter nights. It features chunks of tender chicken breast, black beans, and veggies in a fragrant and spicy broth. Instructions

1.In a large pot, heat the olive oil over medium-high heat. Add the chopped chicken and cook until browned, about 6-8 minutes.
2.Add the diced onion, Mexican-style tomatoes, salsa, chopped garlic, oregano leaves, paprika, cumin powder, and salt. Stir well to combine.
3.Add the rinsed black beans and chicken broth to the pot, and stir to combine.
4.Bring the soup to a boil, then lower the heat and let it simmer for 10-15 minutes.
5.Add the frozen corn, frozen cut green beans, and chopped cilantro (if using) to the soup. Let it cook for an additional 5-10 minutes.
6.Serve hot with cooked Minute brown rice (if using).
