2 garlic cloves , crushed
1/2 teaspoon ground cumin
3 -4 tablespoons lemon juice
chopped parsley ( for the top )

Instructions

1.Preheat your oven to 200°C ( 400°F).
2.Drain and crumble the tofu, and mix with chili powder, cumin, curry, chopped onion, and minced garlic. Spread evenly on a sheet pan and bake for 20-25 minutes.
3.Heat up refried beans in a microwave or on a stove. Warm taco shells in the oven for 5-7 minutes.
4.To make tofu guacamole, mash a large ripe avocado with medium-soft tofu, salt, black pepper, cayenne, crushed garlic, cumin, and lemon juice. Mix well and add chopped parsley on top.
5.Fill the warm taco shells with the baked tofu mixture, refried beans, chiffonade lettuce, chopped tomato, and chopped olive if desired. Top with the tofu guacamole and enjoy!
