Ingredients

1 tablespoon vegetable oil or 1 tablespoon lard
1 large white onion , peeled and sliced into long thin strips
2 heads garlic , peeled and chopped
1/2 lb carrot , peeled and diced
1 lb Huitlacoche , sliced
1 lb shiitake mushrooms or 1 lb oyster mushroom , stemmed and sliced
1 lb black beans
1/4 cup oil or 1/4 cup lard
1 head garlic , peeled and minced
salt , to taste
3 chipotle peppers
5 -6 leaves epazote ( optional )
10 -12 warm tortillas
sour cream
queso fresco
radish , slices

Instructions

1.Heat 1 tbsp oil in a large skillet over medium heat. Add onion and garlic and sauté for 5 minutes.
2.Add carrot and sauté for 5 more minutes.
3.Add Huitlacoche and mushrooms and continue sautéing for 5-7 minutes, or until everything is cooked through.
4.While the vegetables are cooking, prepare the black beans. Heat 1/4 cup oil or lard in another skillet over medium heat.
5.Add garlic and sauté for 1-2 minutes, or until garlic is fragrant.
6.Add black beans and cook for 5-7 minutes, or until heated through.
7.Puree the chipotle peppers in a blender or food processor.
8.Add the pureed peppers and epazote leaves to the beans and cook for an additional 5-7 minutes.
9.Spoon the black beans onto each tortilla, then fold each tortilla in half to make an enfrijolada.
10.Top with sour cream, queso fresco, and sliced radish.
