Ingredients

1 head cabbage
2 tablespoons olive oil , or as needed
1 small onion , thinly sliced
1/2 chopped green bell pepper
1 green onion , sliced
2 sprigs fresh thyme
1 whole Scotch bonnet chile pepper
1 teaspoon salt ( optional )
1 cup shredded carrots
1/4 cup white vinegar
2 tablespoons white sugar
Jamaican Cabbage is a classic island side dish that you'll find at many local restaurants and homes. This cabbage is cooked down with plenty of flavorful onions, garlic, and Jamaican Scotch bonnet pepper which adds a spicy kick to the dish. Served alongside jerk chicken or another Jamaican main dish, this cabbage steals the show with its sweet and tangy flavors. The colorful shredded carrots add a pop of color to the dish and make it a nutritious addition to any meal.

Instructions

1.Remove the outer leaves of the cabbage and discard. Cut the cabbage in half and then slice into thin shreds.
2.In a large skillet, heat olive oil over medium-high heat. Add onion, bell pepper, green onion, thyme, and Scotch bonnet pepper. Sauté for 5 minutes until the onion is tender and translucent. Remove the Scotch bonnet pepper and discard.
3.Add the shredded cabbage and salt (if using) to the skillet, tossing to coat in the oil and onion mixture. Cook for 5 minutes, stirring occasionally, until cabbage is tender.
4.Add the shredded carrots, vinegar, and sugar, stirring to combine. Cook for an additional 2 minutes until the sugar has dissolved and the liquid has evaporated.
5.Serve hot alongside your favorite Jamaican main dishes such as jerk chicken or plantain.
