250 g ready-peeled ready to eat tiger shrimp
3 tablespoons fresh coriander
1/4 teaspoon chili powder ( I use mild )
flour tortilla
shredded lettuce

Instructions

1.Preheat your oven to 200C (180C fan)/ 400F/gas 6.
2.In a large bowl, mix together the chopped tomatoes, cubes of melon, tiger shrimp, fresh coriander, and chili powder.
3.Heat up the flour tortilla in the oven, just until crispy, then add shredded lettuce.
4.Spoon the shrimp mixture onto the tortilla and sprinkle with more fresh coriander.
5.Serve hot or enjoy cold with a refreshing drink.
