Instructions

1.In a large bowl, mix together masa harina and salt.
2.Slowly add 1 1/4 cups of water, mixing with your hands to form a dough.
3.In a blender, combine dried New Mexico chiles, garlic cloves, and 1/2 cup of water.
4.Add the chile paste to the beaten eggs and mix well.
5.Divide the masa dough into 12 balls.
6.On a sheet of wax paper, use a tortilla press to flatten each ball into a 4 inch circle.
7.Spoon 2-3 tablespoons of the egg mixture onto one half of the circle, then fold the other half over to enclose the filling, forming a semi-circle.
8.Heat a large non-stick skillet over medium heat. Cook the gorditos de huevos for 3-4 minutes on each side or until golden brown.
