Baja Fish Tacos are a popular Mexican dish that originated in the coastal towns of Baja California. These tacos are typically made with deep-fried fish, cabbage slaw, and a colorful array of toppings, including salsa, guacamole, and lime wedges. They are served on a freshly made tortilla, giving them a distinct, authentic flavor. In this recipe, we have added a bit of a twist by creating a spicy cabbage slaw that perfectly complements the crispy, flavorful fish. The result is a dish that is both healthy and delicious, making it the perfect choice for any day of the week.

Instructions

1.In a small bowl, mix the salsa and mayonnaise together and set aside to use later.
2.Fill a deep pan or Dutch oven with about 2-3 inches of oil and heat to 375°F.
3.In a medium-sized bowl, whisk together the ¾ cup of beer, flour, and salt until nicely combined. Slowly add enough additional beer until the batter is smooth and just thick enough to coat the fish.
4.Dip the cod fish cubes into the batter, then deep-fry them in batches for about 2-3 minutes each, until they are golden brown and crispy. Remove the fish with a slotted spoon and set aside to drain on a plate with paper towels.
5.Heat the tortillas on a skillet over medium-high heat until they are warm and slightly charred.
6.Fill each tortilla with the fried fish, top with the spicy cabbage slaw and a dollop of the salsa-mayonnaise mixture. Serve with a lime wedge.
