Ingredients

2 2 cups cooked chicken or 2 cups cooked pork butt
2 canned chipotle chiles in adobo ( OR MORE )
1 small onion , coarsley chopped
tomatoes , drained or 1 large tomatoes , coarsley chopped
2 garlic cloves
1 chicken bouillon cube
1 teaspoon salt
5 -6 large onions , sliced into rings about 1/4 inch thick
2 tablespoons vegetable oil
sour cream
shredded iceberg lettuce
grated parmesan cheese ( optional )

Instructions

1.In a blender or food processor, blend together the canned tomatoes, a small onion, garlic cloves, and chipotle peppers until smooth.

3.Add the blended mixture and cook over medium-high heat while stirring occasionally for 10 to 15 minutes.
4.Shred the cooked chicken or pork into bite-sized pieces.
5.Add the chicken or pork, salt, and chicken bouillon cube, and continue cooking for an additional 10 to 15 minutes.
6.Heat the tostadas in the oven or on a stovetop grill.
7.Assemble by placing the warm Tinga mixture on top of a tostada, and topping it with shredded lettuce, a dollop of sour cream, and parmesan cheese to taste.

PROS
