Ingredients

1 lb dry pinto beans
water
1 small onion , chopped
2 garlic cloves , thinly sliced
2 lbs chorizo sausages
1 large onion , chopped
4 medium fresh tomatoes , chopped
2 chili peppers , finely chopped
salt , to taste

Instructions

1.Rinse the pinto beans and soak them in water overnight.
2.The following day, drain the beans and place them in a large pot with enough water to cover them.
3.Add chopped onion and garlic and bring the pot to a boil. Reduce heat and simmer for 2 hours until the beans are tender.
4.In a separate pan, cook the chorizo over medium heat until browned. Remove from heat and drain the excess oil.
