Ingredients

1 quart water
12 pods tamarind ( skin removed ) , broken into pieces
1 habanero pepper , stemmed and chopped ( wear gloves )
2 cloves garlic , chopped
salt and freshly ground black pepper to taste
1 tablespoon brown sugar
1/4 cup cilantro leaves
1 lime , juiced
1 tablespoon white vinegar

Instructions

1.In a medium pot, bring the water to a boil over medium-high heat.
2.Add the tamarind, garlic and habanero pepper, reduce heat to low and let simmer for 20 minutes until soft.
3.Once everything is softened, remove the pot from heat and let it cool.
4.When the mixture has cooled off, pour it into a blender and blend until it reaches a smooth consistency.
5.Add salt, black pepper, brown sugar, cilantro, and lime juice to the blender. Mix with a spoon.
6.Pour the mixture back into the pot and place it over medium heat. Let it simmer for 15 minutes, stirring occasionally.
7.Finally, add white vinegar and continue simmering for another 5 minutes. Taste and add salt if necessary.
